Cadoret, an ode to freshwater oysters

Oyster farmers Cadoret, in Riec-sur-Belon in the Finistère region of France, are specialists in Black Pearl Oysters which they have been farming for more than five generations. These delicate shellfish are immersed in the freshwater running through the Belon river for more than eight months, rendering them plump and crisp and releasing the hazelnut flavour so typical of this oyster variety. For director Jean-Jacques Cadoret, Gourming is the ideal partner for making the Breton culinary heritage known on the international stage.
